matured investment roll over

I have an investment that has matured with interest payable at end of term. If I roll over the investment and interest into another investment/bond, when do I pay income tax on the interest from the original investment? Does it get paid when for example I let the rolled-over investment mature and the cash (capital and interest from first and second investment) is paid back to me? thanks

The interest is assessed in the year it's first paid. ie on first maturity.
With a pinch of salt take what I say, but don't exceed your RDA
