My daughter(US citizen) and husband (UK) were married in the US recently, and are now residing in the UK. Next week, there will be a UK wedding party for the couple and I will be flying from the US to attend. I have been asked to bring her wedding gown with me to the UK for her to wear and bring it back to the US on my return, one week later.

What do I need to do or declare to avoid paying VAT on this gown.

Nothing- personal chattels will not attract VAT- especially if you bring it in as part of your luggage, which I am assuming you are.
